Sour Cream Banana Cake

I have always loved to entertain. I am quite sure that I get this trait from my mom. Growing up I was blessed that she was home with my sister and I. We lived in Seattle and always had an abundance of fresh ingredients at our fingertips. Our home always had the aroma of something good going on in the oven.

So now that I am an Adult, Wife and Mama to two amazing little boys I want them to have the same pleasures that I did as a child. Part of entertaining is getting to bake, which just happens to be one of my favorite things in life. A little over a year ago our oldest son was diagnosed as being on the Autism spectrum and I was told that I should probably stay away from Gluten. So there you had it two out of the four in our family that needed to stay away from Gluten too. I had a panic of how can you exist without flour in today’s world? Well with the help of fellow bloggers and the internet, I have even been able to transform most of our family favorites to Gluten Free and not miss a thing. Here is one of our favorite Cakes.

Sour Cream Banana Cake

½ Cup of oil

1 Cup of sugar

2 eggs, beaten

3 ripe bananas, mashed

½ tsp vanilla

½ Cup sour cream

2 Cups flour, or any gluten free mix that you have on hand

1 tsp baking powder

1 tsp baking soda

1 Cup of dried fruit, nuts or other add in

1 tsp cinnamon

Preheat oven to 350. Generously grease a 6 cup fluted pan. Mix oil, sugar and eggs. Add bananas, vanilla and sour cream.

In a separate bowl blend flour, baking powder and baking soda. Gradually add dry mixture into wet. Mix well.

Pour ½ of the mixture into the fluted pan. Top with fruit or nut mixture. Sprinkle cinnamon on top. Add remainder of the batter and bake for 40-45 minutes or until a knife inserted comes out clean.

Cool on baking rack. Invert onto plate after 20 minutes. Top with powdered sugar if you want or just slice and eat.
